- 1 c. Martha White self-rising corn meal mix
- 1 3/4 c. boiling water
Directions

1Combine corn meal and boiling water; stir to blend.

2In large skillet, heat 1/4-inch shortening over medium heat until a drop of water sizzles when dropped in skillet.

3Spoon batter by tablespoonful into hot skillet.

4Fry until golden brown; turn and fry on other side until golden brown.

5Serve hot with butter. Makes about 10 hoecakes.
