- 1/4 c. chopped celery
- 1 small onion, quartered
- 1 bay leaf
- 1/2 tsp. salt
- 1 (2 1/2 to 3 lb.) fryer, cut into serving pieces
- salad oil or shortening
- 1 1/2 c. sifted flour
- 2 tsp. baking powder
- 2 tsp. salt
- 1/4 tsp. pepper
- 2 eggs
- 1 c. milk
- 1 1/2 Tbsp. salad oil
Directions

1In large skillet, combine celery, onion, bay leaf, salt and 1 cup water.

2Add chicken.

3Bring to a boil, cover and simmer for 15 minutes.

4Drain chicken; pat dry and let cool.

5In deep fryer or skillet, slowly heat oil to 375°.
