Butter Fruit Cake

Ingredients

  • 1 lb. butter (do not use margarine)
  • 1 lb. red candied cherries
  • 1/2 lb. green candied cherries
  • 1/2 lb. raisins
  • 1/2 lb. candied pineapple
  • 1 lb. chopped pecans (4 c.)
  • 2 c. sugar
  • 6 eggs
  • 2 c. all-purpose flour
  • 2 tsp. nutmeg
  • 1/3 c. dark rum or more if desired

Directions

    Cream butter, sugar and eggs until fluffy.

    Mix in flour and nutmeg.

    Add remaining ingredients and mix well.

    This may be cooked in large tube pan or two large loaf pans.

    For tube pan, bake at 200° for 5 hours.

    For loaf pans, cook at 200° for 3 hours.
