- 1 lb carrot, peeled and sliced
- 1 piece fresh gingerroot, about the size of the top joint of your thumb
- 12 teaspoon salt
- 12 teaspoon sugar
- 12 ounce butter
- 12 pint water
Directions

1Peel and cut the ginger into matchstick slices.

2Place all the ingredients in a saucepan.

3Bring to the boil over a rapid heat.

4Reduce the heat and simmer for about ten minutes.

5Drain and serve with a small knob of butter on top.
