  • 6 to 8 butterfly pork chops (cut 3/4 to 1-inch thick)
  • 2 Tbsp. lard or drippings
  • salt and pepper
  • 1/4 c. water

    Brown the chops in lard or drippings in frying pan.

    Pour off drippings.

    Add water; cover tightly and simmer for 45 minutes or 1 hour, or until done.
