- 2 c. cornflake crumbs
- 1/2 c. Parmesan cheese
- 2 tsp. paprika
- 1 tsp. pepper
- 2 c. buttermilk
- 1/2 c. butter, melted
- 2 lb. chicken, remove skin (chicken breasts may be used)
Directions

1Combine first four ingredients together.

2Mix well.

3In a separate bowl, add buttermilk.

4Dip chicken pieces or chicken breasts into buttermilk and then into batter.

5Place into foil lined pan (13 x 9-inch).

6Cover with foil.

7Bake at 400° for 45 minutes.

8Remove from oven, uncover and pour melted butter over chicken.

9Bake, uncovered, an additional 15 minutes at 425°.
