Buttermilk Chicken

  • 2 c. cornflake crumbs
  • 1/2 c. Parmesan cheese
  • 2 tsp. paprika
  • 1 tsp. pepper
  • 2 c. buttermilk
  • 1/2 c. butter, melted
  • 2 lb. chicken, remove skin (chicken breasts may be used)

Directions

    Combine first four ingredients together.

    Mix well.

    In a separate bowl, add buttermilk.

    Dip chicken pieces or chicken breasts into buttermilk and then into batter.

    Place into foil lined pan (13 x 9-inch).

    Cover with foil.

    Bake at 400° for 45 minutes.

    Remove from oven, uncover and pour melted butter over chicken.

    Bake, uncovered, an additional 15 minutes at 425°.
