- 2 c. corn meal
- 1/2 c. sifted flour
- 2 Tbsp. sugar (if desired)
- 1 beaten egg
- 1 tsp. baking powder
- 1/2 tsp. soda
- 1 tsp. salt
- 2 c. buttermilk
- 2 Tbsp. shortening, melted
Directions

1Sift together corn meal, flour, baking powder, soda, salt and sugar.

2Combine egg, buttermilk and shortening.

3Add liquid ingredients to dry mixture, stirring only enough to moisten dry ingredients.

4Pour into hot, well greased muffin pans, corn stick pans or 10-inch skillet or pan.

5Bake in 450° oven for 20 minutes for muffins or corn sticks, 25 to 30 minutes for square pan or skillet.

6Makes about 12 muffins, corn sticks or pieces.
