  • 1 c. yellow corn meal
  • 1 c. all-purpose flour
  • 4 tsp. baking powder
  • 2 Tbsp. sugar
  • 1/2 tsp. salt
  • 1 beaten egg
  • 1 c. buttermilk
  • 1/4 vegetable oil

Directions

    Mix first 5 ingredients (corn meal, flour, baking powder, sugar and salt). Combine egg, buttermilk and oil, then stir into dry ingredients. Pour into a heated well-greased iron skillet. Bake at 425° for 20 to 25 minutes.
