- 2 c. unbleached all-purpose flour
- 2 tsp. baking powder
- 1 tsp. baking soda
- 3/4 tsp. salt (or less)
- 2 eggs
- 3/4 c. sugar
- 2 c. buttermilk
- 1/4 c. melted butter, slightly cooled
- 1 c. yellow cornmeal
Directions

1Preheat oven to 400°.

2Grease an 8-inch round cast-iron skillet or a 9 x 12-inch baking dish.

3Sift together first 4 dry ingredients and set aside.

4Beat together eggs, sugar, buttermilk, melted butter and cornmeal in large bowl (in order).

5Stir dry ingredients into buttermilk mixture.

6Turn into prepared pan.

7Bake at 400° for 25 to 30 minutes or until wooden pick inserted in the center comes out clean.

8Serve warm with chile or beans!
