Buttermilk Cornbread Sticks

  • 2 c. yellow cornmeal
  • 1 c. all-purpose flour
  • 1/4 c. sugar
  • 1 Tbsp. baking powder
  • 1 tsp. salt
  • 1/2 tsp. baking soda
  • 2 eggs, lightly beaten
  • 2 c. buttermilk
  • 6 Tbsp. butter, melted

    Preheat oven to hot (425°).

    Lightly grease cornstick pan. Place in oven to warm while preparing batter.

    Combine cornmeal, flour, sugar, baking powder, salt and baking soda in a large bowl. Add eggs, buttermilk and butter; stir just to moisten.

    Pour batter into each cornstick mold, filling each about 3/4 full. Bake in preheated hot oven (425°) for about 15 minutes or until tops are lightly browned.

    Cool in pan on wire rack for 5 minutes. Using thin metal spatula, carefully remove sticks from pan. Repeat until all batter is used.

    Makes about 28 cornbread sticks.
