- 1 3/4 c. sifted cake flour
- 1 1/4 c. sugar
- 1/2 c. shortening
- 1 tsp. vanilla or almond flavoring
- 1 tsp. soda
- 1/2 tsp. salt
- 1 c. buttermilk
- 2 eggs
Directions

1Sift dry ingredients.

2Add shortening, 2/3 cup buttermilk and flavoring.

3Beat about 1/2 minute at low speed, then 2 minutes at medium.

4Add rest of buttermilk and eggs. Beat 2 more minutes. Makes 2 layers or 24 cupcakes.

5Bake at 375° about 25 minutes.
