Buttermilk Mashed Potatoes

- 1 1/4 lb. potatoes, unpeeled and scrubbed or peeled
- 1 1/2 tsp. salt
- 3/4 c. warm buttermilk
- 1/2 tsp. baking soda
- 2 tsp. unsalted butter
- pepper
Directions

1Place potatoes and 1 teaspoon of salt in saucepan and add enough cool water to cover.

2Bring to boil over high heat.

3Reduce heat and cook until potatoes are tender.

4Drain, reserving few tablespoons cooking liquid.

5Place potatoes in large bowl and mash with potato masher or fork until fairly smooth (with some lumps remaining).

6Combine buttermilk and baking soda and beat into potatoes with wooden spoon; mix well.

7If you prefer creamier potatoes, add reserved cooking liquid.

8Stir in butter, 1/2 teaspoon salt and plenty of pepper to taste.
