- 2 c. sifted, unbleached white flour
- 1/2 tsp. salt
- 1 1/4 tsp. baking soda
- 3/4 tsp. baking powder
- 1 egg
- 2 1/4 c. 1% buttermilk
- 2 tsp. skim milk
- 1 Tbsp. safflower oil
Directions

1In mixing bowl, blend ingredients with a wire whisk, just enough to moisten.

2Dip up batter with a large serving spoon. Bake on a preheated nonstick griddle.

3Turn pancakes when top side is bubbly and a few bubbles have broken.

4Flip only once.

5Makes 20 pancakes.
