  • deep-dish pie shell
  • 1 1/2 c. sugar
  • 2 heaping Tbsp. flour (plain or self-rising)
  • 1 heaping Tbsp. cornmeal mix (plain or self-rising)
  • 4 eggs
  • 3/4 c. buttermilk
  • 1/2 stick melted butter
  • 2 tsp. vanilla extract

Directions

    In blender, blend eggs, then buttermilk and then remaining ingredients for approximately 1 minute.

    Pour into pie shell. Bake on middle rack for approximately 55 minutes at 375°, or until brown on top.
