- 1/2 c. unsalted butter
- 1 1/3 c. sugar
- 3 eggs, separated
- 3 Tbsp. flour
- 1 1/2 c. buttermilk
- 1 Tbsp. lemon juice
- 1/2 tsp. freshly grated nutmeg
- salt
- pie shell
Directions

1Preheat oven to 325°.

2Partially bake pie shell, approximately 10 minutes.

3Cream butter and sugar well; beat in egg yolks, one by one.

4Beat in flour and buttermilk.

5Add lemon juice and nutmeg with a pinch of salt.

6Whip the egg whites stiff and fold into the filling.

7Pour filling into partially baked pie shell and bake in the middle level of the oven until the custard has set and is slightly browned, about 1 hour.
