9 ingredients
3 steps

Ingredients

  • 2 3/8 cups self raising flour plus extra for dusting
  • 1 teaspoon baking powder
  • 1 pinch salt
  • 3 7/8 tablespoons butter cold, cut into pieces, plus extra for greasing
  • 3 1/8 tablespoons golden caster sugar
  • 1 1/4 cups buttermilk
  • 2 tablespoons milk
  • whipped cream to serve
  • strawberry jam to serve

Directions

  1. 1
Sift the flour, baking powder and salt into a bowl. Add the butter and rub until the mixture resembles fine breadcrumbs. Add the sugar and buttermilk and quickly mix together.
  2. 2
Turn the mixture out onto a floured work surface and knead lightly. Roll out to a 2.5cm / 1 inch thick. Using a 6cm / 2.5 inch plain or fluted cutter, stamp out the scones and place on a greased baking sheet. Gather the trimmings, re-roll and stamp out more scones until all the dough is used up.
  3. 3
Brush the tops of the scones with milk. Bake in a preheated oven, 220°C / 425°F, for 12-15 minutes or until well risen and golden. Transfer to a wire rack to cool. Split and serve with whipped (or clotted cream) and strawberry jam.
