Butternut Squash Soup

Ingredients

  • 1 c. finely chopped onion
  • 3 Tbsp. butter
  • 4 c. water
  • 3 pkg. frozen butternut squash
  • 4 Tbsp. fresh lime juice
  • 3 Tbsp. minced ginger
  • 4 c. canned chicken broth
  • 6 cloves garlic
  • salt and pepper to taste

Directions

    In a large saucepan, cook onion and ginger in butter until soft. Add chicken broth, water, garlic and squash. Simmer 15 to 20 minutes.

    Puree in blender. Add lime juice, salt and pepper. Reheat over low heat.
