  • 6 Tbsp. butter
  • 2 1/2 c. scalded milk
  • 3 Tbsp. cornstarch
  • 1/2 c. brown sugar
  • 2 eggs, separated
  • 1/4 tsp. vanilla

Directions

    Melt butter and brown sugar together and cook until a rich brown.

    Add the scalded milk and let heat until sugar is dissolved.

    Beat egg yolks slightly.

    Add cornstarch and pour milk mixture over gradually, stirring constantly.

    Add vanilla.

    Pour into pastry lined pie plate at 450° for 10 minutes, then in a 320° oven, 30 minutes.

    Cover with meringue using the egg whites.
