Cabbage Bean Soup

  • 1 large onion, chopped
  • 2 carrots
  • 1 large stalk celery
  • 2 c. water
  • 2 c. chopped green cabbage
  • 1 Tbsp. brown sugar
  • 1 (16 oz.) can tomatoes in own juice
  • 1 (15 oz.) can navy beans
  • 1 can green beans

Directions

    Saute onion in a large nonstick pan (spray with Pam) for about 3 minutes.

    Halve carrots and celery and then slice crosswise. Add to pan with onion, sauteing slowly over low heat for about 2 minutes.

    Stir in water, cabbage and sugar.

    Simmer, covered, 5 minutes.

    Stir in tomatoes with juice and break up tomatoes. Simmer, covered, for 20 minutes.

    Add beans and simmer, uncovered, 5 minutes until heated through.

    Only 1 gram fat per serving.
