Cabbage Bean Soup

Ingredients

  • 1 lb. ground chuck
  • 1 lb. smoked sausage, sliced
  • 1 large onion, chopped
  • 1 small bell pepper, chopped
  • 2 (16 oz.) cans kidney beans, undrained
  • 2 (16 oz.) cans tomatoes, undrained and chopped
  • 2 potatoes, peeled and cubed
  • 2 to 3 c. cabbage, chopped
  • 1/2 tsp. salt
  • 1/4 tsp. garlic powder
  • 1/4 tsp. black pepper
  • 1/4 tsp. red pepper

    In a 5 quart pot, brown beef, sausage, onion and bell pepper. Drain if necessary.

    Add about 4 cups of water, beans, potatoes and seasonings.

    Bring to a boil.

    Reduce to low and simmer 30 to 35 minutes.

    Add cabbage and continue to cook until potatoes are tender and cabbage is done.

    Yields 8 to 10 servings.
