Cabbage Bean Soup

  • 8 to 16 oz. Polish sausage, sliced
  • 1 medium onion, chopped coarse
  • 1 tsp. salt
  • 1/2 tsp. thyme
  • 1/4 tsp. pepper
  • 1 small cabbage, shredded coarse
  • 1 (16 oz.) can tomatoes
  • 2 c. water or broth
  • 2 cans navy beans

Directions

    Brown sausage.

    Add onions and saute until tender.

    Stir in salt, thyme, pepper, cabbage, tomatoes and broth or water.

    Bring to a boil.

    Stir in beans.

    Reduce heat.

    Cover and simmer 20 minutes or until cabbage is done.

    Great with cornbread!
