Cabbage Bundles

Ingredients

  • 1 large head cabbage
  • 1/2 lb. ground chicken
  • 1 c. rice, cooked
  • 1 onion, minced
  • 2 Tbsp. cooking oil
  • salt and pepper to taste
  • 1 can cream of chicken soup
  • 1/2 c. sour cream (optional)

Directions

    Remove outer leaves from cabbage head and steam in salted water for about 5 minutes or until leaves are flexible.

    (Save inner head of cabbage for other uses.)

    Drain and cool leaves. Saute onion and ground chicken until slightly browned.

    Add cooked rice and seasonings.

    Drop a tablespoon of mixture on the stem end of a cabbage leaf.

    Roll into bundles and fasten with a toothpick. Place bundles in baking pan or casserole dish and pour undiluted soup over them.

    Bake in a 350° oven, about 45 minutes.

    If desired, sour cream can be added just before serving.
