Cabbage Lasagna

  • 1 small head cabbage, shredded
  • 15 to 18 oz. low sodium tomato sauce or V-8 juice
  • 1 c. fresh mushrooms, sliced
  • 1/2 green pepper, diced
  • 1/4 c. onion, diced
  • 1 lb. ground beef
  • 1 c. low-fat cheese, shredded

    Brown ground beef with onion and green pepper.

    Drain well. Add sauce.

    In a large casserole sprayed with nonstick cooking spray, layer meat, cabbage and cheese.

    Continue to layer until all ingredients are used.

    Cover and bake at 350° until cabbage is tender, about 1 hour.

    Serves 4 to 6.
