- 1 lb. lean ground beef
- 1 c. onion, chopped
- 1/2 c. chopped green pepper
- 1 medium cabbage
- 1/2 tsp. oregano
- 1 tsp. salt
- 1/8 tsp. pepper
- 1 (18 oz.) can tomato paste
- 8 oz. Mozzarella low-fat cheese, sliced
Directions

1Saute ground beef, onion and pepper until meat is brown.

2Boil cabbage until tender.

3Save 2 cups of liquid from cabbage and drain off excess.

4Combine reserved liquid, oregano, salt, pepper and tomato paste.

5Simmer over low heat for 4 minutes.

6Add meat mixture to tomato liquid.

7In a 9 x 13-inch pan, layer cabbage, then tomato mixture.

8Repeat layer.

9Top with slices of cheese. Bake at 400° until cheese is browned, about 30 to 45 minutes. Serves 8.
