Ingredients

  • 1 lb. ground beef
  • 2 c. sliced onion
  • 1 large garlic clove or 1/2 tsp. granulated garlic
  • 1 head cabbage (about 10 c.), cut in chunks
  • 2 c. carrots, sliced thin
  • 2 c. potatoes, diced
  • 1/2 tsp. thyme
  • 3 Tbsp. parsley
  • 1 bay leaf
  • 2 cans beef broth (14 1/2 oz. cans)
  • salt and pepper to taste

Directions

    In large cook pot, brown ground beef and onion.

    Add garlic, salt and pepper, thyme, parsley, bay leaf, beef broth and cabbage. Cook for 20 minutes.

    Add carrots and potatoes.

    Simmer until vegetables are tender.

    Remove bay leaf.

    Serve with hard rolls or Italian bread.
