Cabbage Rolls

  • 1 head cabbage
  • 2 lb. ground beef
  • 1/2 to 3/4 lb. sausage
  • 1/2 medium onion
  • 2 eggs
  • 2 (14 to 16 oz.) cans tomatoes
  • 2 (8 oz.) cans tomato sauce
  • 1 large can or jar and 1 small can sauerkraut

Directions

    Boil cabbage head until leaves are soft.

    Mix together meat, onion and eggs.

    Spoon mixture into leaves and roll up using toothpicks when necessary.

    Line bottom of pan with cabbage leaves and sauerkraut.

    Make one layer of cabbage rolls.

    Pour over rolls the tomatoes, tomato sauce and sauerkraut, then another layer of cabbage rolls, tomatoes, tomato sauce and remaining sauerkraut. Bake at 350°, covered, for 1 1/2 hours, then uncovered for 1 1/2 hours.

    Makes approximately 30 rolls.
