Cabbage Salad

  • 1 large head cabbage, shredded
  • 2 carrots, shredded
  • 1 medium onion, chopped
  • diced celery and green pepper (if desired)
  • 3/4 c. vinegar
  • 3/4 c. salad oil
  • 1 tsp. salt
  • 1 1/3 c. sugar
  • 1 Tbsp. celery seed

Directions

    Mix the cabbage, carrots, onion, celery and green pepper well. Boil the vinegar, oil, salt, sugar and celery seed for 3 or 4 minutes.

    Pour over vegetable mixture while hot.

    Weight down and let stand until salad is cold.

    Refrigerate for several hours. Divide into containers and store in refrigerator or freezer.

    Will keep 3 weeks or more in refrigerator and indefinitely in freezer.
