- 4 cup Water
- 1 cup Tomatoes (diced/seasoned canned if available)
- 1 small V8 or vegetable juice
- 1 packages Onion soup mix (or large diced onion)
- 1 tsp Minced garlic (or more, to taste)
- 1 head Cabbage (cut into bite sized pieces)
- 1 large Green bell pepper (cut into bite sized pieces)
- 2 large Carrots (sliced)
- 1 head Cauliflower (cut into bite sized pieces)
- 5 large Mushrooms (sliced or can of sliced mushrooms)
- 3 stick Celery (sliced)
- 1 Salt and pepper
Directions

1In a large pot, mix onions, garlic, vegetable juice and water and bring to a boil.

2Add chopped cabbage, carrots, cauliflower, and celery.

3When vegetables are partially cooked, add green peppers and mushrooms, then continue cooking until vegetables are cooked but firm, stirring occasionally.
