  • 2 lb. lean ground beef
  • 1 medium head cabbage, chopped
  • 1 (32 oz.) can V-8 juice
  • 1 can tomatoes
  • 2 cans Ro-Tel diced tomatoes with peppers
  • 2 cans red beans
  • 1 pkg. dry Italian salad dressing mix
  • 1 pkg. Zesty dry Italian salad dressing mix

Directions

    In a 6-quart pan, brown ground beef; drain fat.

    Add remaining ingredients and simmer for 1 hour.

    The soup freezes well and is better the second day.
