- 1 egg, coddled for 1 minute
- 1 c. olive oil
- juice of 1 lemon
- 1 clove garlic
- 1/4 c. grated Parmesan cheese
- 1 tsp. salt
- 1 tsp. white pepper
Directions

1Coddle egg for exactly 60 seconds in simmering water.

2Place egg in blender; while blending slowly, dribble in half of the oil. Add lemon juice, garlic and cheese.

3Add salt and pepper to taste.

4Slowly blend in the rest of the oil.

5This dressing is best over romaine lettuce, but works well with all salads.
