  • 1 lb. farfalle pasta
  • 1/4 c. fresh lemon juice
  • 1 tsp. grated lemon peel
  • 1/4 c. grated Parmesan cheese
  • 3 tbsp. light mayonnaise
  • 3 tbsp. extra-virgin olive oil
  • 2 clove garlic
  • 1 tsp. salt
  • 1 tsp. Pepper
  • 1 pt. multicolored grape tomatoes
  • 1 medium zucchini
  • 1 c. frozen peas
  • 1/4 c. packed fresh basil leaves

    Heat large covered saucepot salted water to boiling on high.

    Cook pasta as label directs.

    Meanwhile, from lemon, grate peel and squeeze juice into large bowl.

    Whisk in Parmesan, mayonnaise, oil, garlic, pepper, and 1 teaspoon salt.

    Add tomatoes, zucchini, peas, basil, and cooked pasta; toss well.

    Serve warm or chilled.
