- 2 cloves garlic, crushed
- 1 tsp. capers, crushed
- 1/2 c. olive oil
- 1 head romaine lettuce
- 1 Tbsp. each: lemon juice and lime juice
- 2 tsp. fish sauce (Chinese section)
- 1 egg, coddled
- several dashes Tabasco
- freshly grated Parmesan cheese
- onion and garlic croutons
Directions

1Wash and dry romaine.

2Break into bite size pieces, discarding veins.

3Combine garlic and capers.

4Add olive oil; mix well.

5Add juices and fish sauce.

6Coddle egg by running under very hot water for 2 minutes.

7Separate egg; discard white and add yolk to dressing, beating with fork.

8Add Tabasco.

9Pour dressing over lettuce and smother with Parmesan and croutons.

10Ground black pepper at the table.
