Ingredients

  • 2 cloves garlic, crushed
  • 1 tsp. capers, crushed
  • 1/2 c. olive oil
  • 1 head romaine lettuce
  • 1 Tbsp. each: lemon juice and lime juice
  • 2 tsp. fish sauce (Chinese section)
  • 1 egg, coddled
  • several dashes Tabasco
  • freshly grated Parmesan cheese
  • onion and garlic croutons

Directions

    Wash and dry romaine.

    Break into bite size pieces, discarding veins.

    Combine garlic and capers.

    Add olive oil; mix well.

    Add juices and fish sauce.

    Coddle egg by running under very hot water for 2 minutes.

    Separate egg; discard white and add yolk to dressing, beating with fork.

    Add Tabasco.

    Pour dressing over lettuce and smother with Parmesan and croutons.

    Ground black pepper at the table.
