Cajun Coated Catfish

  • 1 1/4 to 1 1/2 lb. catfish fillets
  • Tony Chachere Creole seasoning to taste
  • 1/3 c. cooking oil
  • 2 c. crushed Special K cereal

Directions

    Wash and drain catfish fillets.

    Cut into large bite size pieces.
  3. 3
    Season on both sides with Tony Chachere Creole seasoning (use sparingly, hot!).

    Dip fish into cooking oil and then coat well with Special K. Lay each piece of fish in an ungreased glass pan and cook for 15 minutes in a 450° oven.
