- 1 c. yellow corn meal
- 1/2 tsp. baking soda
- 1 tsp. salt
- 1/4 c. cooking oil
- 1 medium onion, chopped
- 3 jalapeno peppers, chopped
- 1 c. sour cream
- 2 eggs
- 1 can creamed corn
- 1 c. shredded Cheddar cheese
Directions

1Heat 1/4 cup cooking oil in iron skillet in 400° oven.

2While oil is heating, stir together in mixing bowl all ingredients, except Cheddar cheese.

3Pour half of batter into heated skillet and top with 1/2 cup shredded Cheddar cheese.

4Pour remaining batter on top and sprinkle on other 1/2 cup shredded Cheddar cheese.

5Bake at 400° for 35 or 45 minutes, until lightly browned on top.
