  • 1 c. yellow corn meal
  • 1/2 tsp. baking soda
  • 1 tsp. salt
  • 1/4 c. cooking oil
  • 1 medium onion, chopped
  • 3 jalapeno peppers, chopped
  • 1 c. sour cream
  • 2 eggs
  • 1 can creamed corn
  • 1 c. shredded Cheddar cheese

Directions

    Heat 1/4 cup cooking oil in iron skillet in 400° oven.

    While oil is heating, stir together in mixing bowl all ingredients, except Cheddar cheese.

    Pour half of batter into heated skillet and top with 1/2 cup shredded Cheddar cheese.

    Pour remaining batter on top and sprinkle on other 1/2 cup shredded Cheddar cheese.

    Bake at 400° for 35 or 45 minutes, until lightly browned on top.
