- 2 cups Carrots, Sliced Into Slices Or Strips, 1/2 Inch Thick
- 2 cups Baby Beets, Sliced Into Circles Or Strips 1/2 Inch Thick
- 1 Tablespoon Olive Oil
- 1 teaspoon Vegetable Seasoning
- 1/4 cups Fresh Herbs Of Choice, For Garnish

1Preheat oven to 400 F.

2Toss carrots and beets (and/or other roots of your choice such as parsnips) with olive oil. Place onto a rimmed baking sheet and sprinkle with your favorite vegetable seasoning. Bake for approximately 40 minutes or until tender (but not mushy).

3Remove from oven and allow to cool for 5 minutes prior to serving. Garnish with fresh herbs and enjoy!
