- 2 cans creamed corn
- 1 c. corn bread mix
- 2 tsp. garlic salt
- 1 tsp. hot Cajun seasoning
- 4 eggs, beaten
- 1/2 c. canola oil
- 1 jar pimentos
- 2 jalapeno peppers
- 1 c. grated Cheddar cheese
Directions

1Separate eggs and beat.

2Combine egg yellows, oil, corn, pimentos, jalapenos and corn bread mix.

3Pour into casserole. Bake at 325° for 45 to 50 minutes.

4Sprinkle grated cheese over casserole for the last 3 minutes.
