  • 2 cans creamed corn
  • 1 c. corn bread mix
  • 2 tsp. garlic salt
  • 1 tsp. hot Cajun seasoning
  • 4 eggs, beaten
  • 1/2 c. canola oil
  • 1 jar pimentos
  • 2 jalapeno peppers
  • 1 c. grated Cheddar cheese

Directions

    Separate eggs and beat.

    Combine egg yellows, oil, corn, pimentos, jalapenos and corn bread mix.

    Pour into casserole. Bake at 325° for 45 to 50 minutes.

    Sprinkle grated cheese over casserole for the last 3 minutes.
