- 6 ears fresh tender corn
- 4 Tbsp. vegetable oil
- 2 large ripe tomatoes, peeled and chopped
- 1 medium white onion, sliced in thin circles
- 1 tsp. sugar
- sprinkle of Tony's all-purpose seasoning to taste
Directions

1Cut corn lengthwise through less than half of corn kernel.

2Cut second time to remove of grain (don't cut deeply into the corn cob).

3In a heavy skillet, combine oil, corn, tomatoes and seasonings.

4Cook over low heat for 20 minutes, stirring to keep from sticking.

5Cover and let stand for a few minutes before serving.

6Serves 6 to 8.
