- 1 large bell pepper, chopped
- 3 stalks celery, chopped
- 2 c. uncooked rice
- 6 c. water
- 2 envelopes instant soup mix (I use beefy mushroom and onion)
Directions

1Brown sausage, stirring to crumble; drain.

2Stir in remaining ingredients.

3Place in large casserole or 2 medium size.

4Cover and bake for 1 hour at 350°.

5Uncover for 15 to 20 extra minutes. Freezes well.
