- 1 lb. peeled crawfish tails (defrosted if frozen)
- 1/4 cup butter
- 1/4 cup flour
- 1/4 cup olive oil
- 1 lg. onion, chopped
- 1 clove garlic, minced
- 1 green pepper, chopped
- 2 tbsp. chopped parsley
- 1 tbsp. cajun seasoning
- 2 cups hot cooked rice
Directions

1In a large cast-iron pan, melt butter.

2Stir in flour and cook over medium heat 10-15 minutes until the flour turns golden brown.

3Add olive oil and stir to blend.

4Add onion, garlic, and pepper, and cook until vegetables are tender, about 15 minutes.

5Add crawfish, parsley and cajun seasoning.

6Simmer uncovered until seafood is tender, about 15 minutes.

7Serve over hot rice.
