Cajun Fish Wrap

- 2/3 cup cornstarch
- 2 tbsp Cajun spice
- 2 tbsp olive oil
- 2 1/2 tbsp butter
- 4 None boneless white fish fillets
- 4 None sandwich wraps
- 1/2 cup mayonnaise
- 803 oz baby spinach
- 8 slices Cheddar cheese, halved
- 1 None avocado, pitted, peeled, finely chopped
Directions

1In a large bowl, combine cornstarch and Cajun spice mix. Season.

2Heat olive oil and butter in a frying pan over high heat. Dust fish in flour mixture, shaking off excess. Fry for 1-2 mins per side, until flesh flakes easily when tested with a fork. Drain on paper towels then halve lengthwise.

3Meanwhile, spread mayonnaise over wraps. Top with spinach, cheese, avocado and fish. Roll up and serve.
