  • 1 tsp sea salt
  • 1 tsp white pepper
  • 1 tsp dried basil
  • 3/4 tsp dry mustard
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp dried oregano
  • 1/4 tsp ground nutmeg
  • 1 3/4 cup onions, chopped
  • 1 cup celery, chopped
  • 4 tbsp unsalted butter
  • 3 1/2 cup peeled white potatoes, cube
  • 2 1/2 cup ham, cubed
  • 6 fried eggs
  • 2 tbsp fresh parsley, chopped

    Combine all the seasoning mix ingredients in a small bowl.

    Stir to mix well.

    Set aside.

    In a large skillet, melt the butter over medium heat.

    Sprinkle in about 2 teaspoons of the seasoning mix.

    Add the onions and celery and saute into vegetables are translucent.

    About 6 minutes.

    Add the ham and the potatoes.

    Sprinkle in the rest of the seasoning mix.

    Raise heat to medium-high and begin tossing and turning the hash, letting it brown.

    This process will take every bit of 30 minutes.

    There well be an urge to crank up the heat.

    The potatoes will be burnt on the outside and raw on the inside.
