  • 1 1/2 c. yellow cornmeal
  • 1 c. chopped onion
  • 1 c. chopped bell pepper
  • 3/4 c. Crisco oil
  • 1/4 c. flour
  • 2 c. mild grated cheddar cheese
  • 3 or 4 diced jalapenos
  • 2 large eggs
  • 1 1/4 c. buttermilk
  • 1 Tbsp. vinegar
  • 1 can whole kernel corn, drained
  • 1 can cream style corn
  • 1 Tbsp. salt
  • 1 Tbsp. juice from peppers
  • 3 Tbsp. baking powder

Directions

    Mix all ingredients well in a large bowl.
