  • 2 (8 oz.) cans oysters, drained
  • 1/2 c. chopped onion
  • 1/2 c. chopped celery
  • 1/4 c. butter
  • 2 c. sliced mushrooms
  • 1/4 c. all-purpose flour
  • 1 tsp. salt
  • 2 c. milk
  • 1 1/2 to 2 c. shredded Cheddar cheese
  • 1 (2 oz.) jar diced pimentos
  • 1 (10 oz.) can cream of potato soup
  • 1/4 tsp. Tabasco pepper sauce
  • pepper to taste

Directions

    Cook onion and celery in butter until al dente.

    Add mushrooms.

    Cook 1 minute over low heat.

    Stir in flour, salt and pepper.

    Add milk gradually until thickened.

    Add cheese; stir until melted.

    Add oysters, potato soup, pimentos and Tabasco. Heat until oysters curl, about 10 minutes.
