Ingredients
- 2 (8 oz.) cans oysters, drained
- 1/2 c. chopped onion
- 1/2 c. chopped celery
- 1/4 c. butter
- 2 c. sliced mushrooms
- 1/4 c. all-purpose flour
- 1 tsp. salt
- 2 c. milk
- 1 1/2 to 2 c. shredded Cheddar cheese
- 1 (2 oz.) jar diced pimentos
- 1 (10 oz.) can cream of potato soup
- 1/4 tsp. Tabasco pepper sauce
- pepper to taste
Directions

1Cook onion and celery in butter until al dente.

2Add mushrooms.

3Cook 1 minute over low heat.

4Stir in flour, salt and pepper.

5Add milk gradually until thickened.

6Add cheese; stir until melted.

7Add oysters, potato soup, pimentos and Tabasco. Heat until oysters curl, about 10 minutes.
