- 6 (1-inch) center-cut pork chops
- 2 c. cooked rice
- 1 large tomato, sliced
- 1 large bell pepper, cut into 1-inch rings
- 1 can cream of chicken or chicken soup
- 1 medium onion, sliced
- 2 (No. 3) cans tomatoes, mashed
- salt and pepper to taste
Directions

1In large skillet, brown the seasoned pork chops.

2Place in large baking dish so that each chop will be on bottom.

3Place 1 pepper ring on each pork chop.

4Place large spoon of rice in bell pepper ring.

5Pat until firm.

6Put generous tablespoon of soup (undiluted) on rice.

7Place a slice of onion and a slice of tomato on top.

8Pour mashed tomatoes over chops and cover with foil. Bake 1 hour at 375°.

9Serves 6.
