Cajun Style Red Beans

Ingredients

  • 2 lb. red beans
  • 2 large onions, chopped
  • 4 small garlic cloves, minced
  • salt and pepper to taste
  • 1/2 tsp. dried marjoram
  • 1 Tbsp. sugar
  • 1/4 c. bacon drippings
  • 1 large bell pepper, chopped
  • 1 ham hock (1 1/2 lb.)
  • red pepper to taste
  • 2 bay leaves
  • 2 lb. hot sausage, sliced

Directions

    Rinse beans; drain.

    Cover with water and soak overnight. Next day, drain beans, cover with water and bring to a boil along with the ham hock.

    Reduce heat and simmer until beans are just tender.

    Add all other ingredients and simmer an additional 30 to 45 minutes.

    Remove ham hock and cut into small pieces.

    Return to pot.

    Serve with hot rice and corn bread.
