- 3 lb. squid, cleaned and cut into rings
- 1 1/2 c. flour
- 1/4 c. grated Parmesan
- 1/4 c. Italian bread crumbs
- 1/4 tsp. each: salt and pepper
- peanut oil for frying
Directions

1Dry squid on paper towels.

2Combine dry ingredients and coat squid with flour mixture.

3Heat peanut oil to 365°.

4Deep fry a few rings at a time until golden brown, about 3 minutes.

5Do not overcook.

6Drain on paper towels.

7Serve hot with horseradish, sweet and sour or marinara sauce.
