- 10 ounces squid tubes cleaned
- 2 teaspoons oil
- 1/4 cup lemon juice
- 2 tablespoons fish sauce
- 1 tablespoon sweet chili sauce each
- 1 tablespoon hoisin sauce
- 1 tablespoon water
- 12 cherry tomatoes halved
- 1 mini cucumber seeded, thinly sliced
- 1 red onion sliced
- 2 tablespoons mint leaves
- 2 tablespoons cilantro leaves
- 3 green onions sliced
- 1 tablespoon lemongrass thinly sliced
- radicchio leaves to serve
Directions

1Chop and score calamari tubes. Cut into large cubes.

2Heat oil in a wok or large frying pan on high and stir-fry calamari 1 minute.

3Add lemon juice, sauces and water and cook 2 minutes, until calamari is tender. Transfer to a large bowl. Cool slightly.

4Add tomatoes, cucumber, red onion, mint leaves, cilantro leaves, green onions and lemongrass and toss to combine

5Serve salad on a bed of radicchio leaves.
