Ingredients
- 1 c. cornmeal
- 1 c. all-purpose flour
- 1/4 c. sugar
- 1 Tbsp. baking powder
- 1/4 tsp. ground red pepper
- 1 c. milk
- 1 egg, beaten
- 1/4 c. margarine, melted
- 1 c. canned or frozen whole kernel corn
- 1/4 c. chopped red pepper
- 1/4 c. chopped onion
Directions

1In a medium bowl, combine cornmeal, flour, sugar, baking powder and red pepper.

2Stir in milk, egg and margarine just until blended (batter will be slightly lumpy).

3Stir in corn, chopped red pepper and onions until just mixed.

4Spoon mixture into 12 lightly greased 2 1/2-inch muffin cups.

5Bake at 400° for 20 to 25 minutes or until done.

6Remove from pan.

7Cool slightly on wire rack.

8Serve warm at room temperature.
