- 1/4 c. oil
- 1 lb. lean ground beef
- 2/3 c. chopped onion
- 1/3 c. chopped green pepper
- 1/2 c. rice
- 1 1/2 tsp. salt
- 1/4 tsp. pepper
- 3/4 c. ripe olives
- 2 c. hot water
- 1 (6 oz.) can tomato paste
Directions

1Brown meat in oil in skillet.

2Spoon into 2-quart casserole (leave drippings in skillet).

3In drippings, cook onion and green pepper until limp and brown.

4Leave drippings and spoon vegetables over meat in casserole.

5In skillet, cook and stir rice until light brown.

6Stir rice, seasonings and olives into meat and vegetables.

7Blend water and tomato paste; pour over meat mixture. Bake, covered, at 350° for 1 hour.

8Serves 4 to 5.
