Ingredients

  • 1 15 oz. can corned beef hash
  • 2 tbsp virgin olive oil
  • 4 medium size russet potatoes par- boiled or 1/2 baked
  • 1 medium yellow onion diced
  • 1 cup spicy bloody mary mix
  • 1 tsp. fresh ground black pepper
  • 1/2 cup diced left-over roasted or boiled corn beef ( optional)

    pre-heat oven to 350

    in cast iron skillet saute onion with black pepper in oil. remove and set aside

    saute potatoes until light golden
  4. 4
    add hash and onions
  5. 5
    add left-over beef
  6. 6
    add bloody mary mix
  7. 7
    simmer for 15 minutes
  8. 8
    bake for 15 minutes
