- 1 15 oz. can corned beef hash
- 2 tbsp virgin olive oil
- 4 medium size russet potatoes par- boiled or 1/2 baked
- 1 medium yellow onion diced
- 1 cup spicy bloody mary mix
- 1 tsp. fresh ground black pepper
- 1/2 cup diced left-over roasted or boiled corn beef ( optional)
Directions

1pre-heat oven to 350

2in cast iron skillet saute onion with black pepper in oil. remove and set aside

3saute potatoes until light golden
-
4add hash and onions
-
5add left-over beef
-
6add bloody mary mix
-
7simmer for 15 minutes

8bake for 15 minutes
